
For making shami kabab:
Ingredients are:
1/2 kg minced mutton or beef
1-2 eggs
100 gms bengal gram(chana dal)
1"ginger
10-12 garlic
4-5 red whole chilli
1"cinnamon(dal chini)
6-7 peppercorns(kalimirch)
4 cardamoms
1 spoon cumin seeds(zeera)
1 medium onion(pyaz)finely chopped
few corriander leaves
few mint leaves
3-4 green chillies
clarified butter or ghee or refined oil
salt as per taste
- boil minced meat with 2 cups of water ,chana dal,red chillies ,whole garam masala,garlic n ginger,
- Salt till water is absorbed and meat is tender.
- Grind the mixture in a fine paste.
- Now mix well beaten eggs.
- Chopped onion,green chillies,corriander leaves,mint leaves.
- And prepare a uniform dough.
- Shape the dough into small round flateen ball or kababs.
- Heat ghee or oil and deep fry kababs till golden brown
- And serve hot with sauce or green chutney
my grand maa always make this kabab. we have it with roti or paratha. its too ossom.
